We put this together with our good friends at Choryo Brewing of Nara, Japan. Choryo Brewing originally produced sake but also entered the craft beer scene.

What makes this super dry saison so special is that we used Koji, a unique ingredient used in food and beverage production for hundreds of years for sake, soy sauce, miso, and tempeh. It also hits with a “sea foam” salinity quality.
